Cuvée L'Inconnu (meaning the unknown) makes its debut! Made from a single vintage, single vineyard in the traditional Méthode Champenoise, it was harvested in the foggy, early morning hours from our Wente Block, it is 100% Chardonnay. Lightly pressed with stems to stainless steel tank, it fermented there, then the juice was racked to a 2nd tank where it rested 12 months. July 2013, we put it through its secondary fermentation and capped it. It rested on lees for 4 1/2 years. In early 2017, the sparkling wine was disgorged, topped off with the same vintage sans dosage, then corked, caged, labeled & foiled in our cellar in Santa Barbara. The flavor profile of the wine reflects where the vines are anchored, in silty soil on the cool banks of the Santa Ynez River. It loaded with citrus notes balanced by minerality. The effect is clean and linear... a great tasting wine that happens to have bubbles. This was the goal and we couldn't be happier with the result.
